Course 1: Tomato and Melon Salad
End of season dry farmed tomatoes are served with a mixture of melons, garnished with pistachio butter, tarragon and chili.
Course 2: Diavolo Braised Pork
Pork shoulder is rubbed with fennel, chili, paprika and cumin before it braises in red wine until tender. The pork is then served over corn and herb studded polenta and is garnished with chimichurri and a sous vide egg.
Course 3: Housemade Pastries
The meal concludes with housemade shortcakes and bomboloni served alongside an array of jams and butters.
